
Two-ingredient Banana Pancakes
It’s Pancake Day tomorrow. Here’s the display in the supermarket with ingredients to help make pancakes.
I picked up a bottle of the biscuit spread to look at the label. Biscuit spread? Either way, ouch. It’s filled with unhealthy vegetable oils and sugar. Take a look.
What to do?
There is a solution! If you love pancakes and would like to have some, on Pancake Day, or any other day of the week, here’s a version that I thoroughly recommend.
It’s quick to make (no need to let the batter sit before using), it’s nutritious and, just as importantly, it’s yummy. It’s also free from wheat and gluten, as well as dairy, if you happen to be sensitive to those.
The bananas give the pancakes that little bit of sweet, without having to add any other sweeteners like honey or golden syrup or sugar, you can squeeze a little lemon over it if you choose, and it gives you potassium, vitamin C and manganese.
Bananas can contain quite a high level of carbohydrate, which can easily raise blood sugar levels quickly in sensitive individuals, particularly when eaten on its own. However, when eaten together with some protein and fat, its effect on blood sugar levels may be tempered.
Enter the other ingredient – eggs. Eggs are super versatile. You can hard-boil, poach, fry or scramble them, and you can use them in your baking or other cooking… like these pancakes!
Each egg has about 6g of protein and minerals such as iron and folate, as well as vitamins B12, A, D and E. The egg yolk also contains choline, which plays a vital role in our brain health. It’s essential for the making of acetylcholine (an important messaging chemical or neurotransmitter) which helps with cognition and memory. Choline is also a key component of our cell membranes, and it’s also needed for proper metabolism of fats. Did you know, without choline, fats can become trapped in the liver and compromise its ability to help our bodies detoxify.
